A Christmas Card for Readers (Christmas Recipes Too)

This is a “Taste It Missoula” special holiday edition. Whether you celebrate Christmas, Hanukkah or some other holiday this time of year, I hope that it is a time of peace and joy for you and your families. Being this is most of the time a food blog, let’s eat!

My Christmas favorite is Prime Rib of Beef served with Au Jus, Mashed Potatoes, and Steamed Buttered Broccoli with Parmesan Cheese.

First off let’s talk Au Jus. You have essentially three choices here as for making au jus which is French for “with juices”. Choice one is to make it from scratch. Choice two is to buy a mix or au jus base. Choice three is to buy pre-made au jus and heat it on the stove. Okay I lied, the fourth choice is to go to a restaurant and let them do the cooking.

For the sake of argument let’s reject choices three and four because you won’t need recipes for those. I love making au jus from scratch. Although it takes a little time, the smell in the kitchen alone, is worth it. It sounds harder than it is. Prep time is maybe 20 minutes. Most of the cooking time it is left unattended so that you can go about preparing the rest of your meal.
